Average food quality! The goose was too fat with 2 inches fat on it! I supposed they should choose better quality goose ! Crab was average only! Need more tasty sauce to go with the Flat Rice noodles! Baby squid, BBQ pork, fish Broth, Fried Rice were excellent ! Not quite worth to wait for 3 months!

Great service. Ate there with a group of 5. Server was mindful that I don't eat prawns and lobsters, so he helped to remove all trace of them in individual servings. Their deep fried rice noodles is surprisingly refreshing. A great partner to the entire song and dance that is the Camphor Wood Smoked Black Foot Goose, these deep fried rice noodles dutifully absorbs the dripping oil from the succulent goose, and its light batter leaves a refreshing tinge in your mouth. Highly recommended! Their Char Siu is one of the stars of the eating experience at The Chairman. Nowhere near the greatness of the deep fried rice noodles, nevertheless a worthy dish on its own.

First time since they moved and lucky to be invited and had a nice evening. Food was tasty in general, the pepper crab and the eel pot rice were the highlight. Though given the hype and the difficulty to book I feel the whole experience now is a bit overrated. There are plenty of great Chinese restaurants in HK to choose from if you don’t want to deal with the chaos to secure a table here.

Food was okay. Honestly it didn't really live up to expectations. It was a nice twist on classical Cantonese cuisine but it wasn't that delicious. Considering how difficult it was to get a reservation, I think there are better places in Hong Kong with just as good if not better food.

Well worth the wait. The dishes were a gourmet’s adventure. Especially liked the crab dish and the soup. We booked the seats one year before.

The epitome of Cantonese cuisine, The Chairman thoroughly deserves it's reputation as one of the best in Asia. While their signature Flowery Crab with Aged ShaoXing Wine was delightful, the dishes that really took my breath away were the tender and perfectly charred Char Siu, and the fragrant Smoked black foot Goose. Service was excellent and the service staff could remember each diners' whims, a real plus point.

Returned in October 2023 to a new space definitely nicer then the old space I went to couple of years back. Food is still good and really enjoyable . some of the favorites of mine included some not on the menu add ons recommended like the geoduck with “congee” like soup - I really liked this . And the stinky tofu was pretty shiok too , along with the pigs tails , steamed fish jaw and the pork Bao , and oh yummy the eel claypot rice was just a perfect way to end the meal. It's really places like that that reminds me about why I miss Cantonese, Chinese food in Hong Kong.

Probably the most difficult to make reservation restaurant in Hong Kong. The menu is mostly preset. You can choose 3 appetizers and 3 mains. The drunken crab is a must try although the 花雕is a big too heavy for me. Portion size are too much for small appetite eaters. Service is thoughtful. They have a trolley with boxes and bags. Seems like taking away food is not uncommon. Recommend but you will need to try your luck in making reservation.
